So, get ready to embrace the magic of homemade Baked Double Chocolate Doughnuts!

Crafting the Perfect Baked Double Chocolate Doughnuts

These delightful treats fall into the “cake doughnut” category, meaning they’re baked to perfection in a doughnut pan. The process is remarkably simple, requiring minimal effort and no fancy equipment. You’ll start by combining all the dry ingredients in one bowl, ensuring they’re well-mixed. In a separate bowl, whisk together the wet ingredients until they’re perfectly blended. Then, simply add the dry mixture to the wet, and whisk gently until just combined. That’s right – absolutely no electric mixer required! The entire batter comes together in about 10 minutes flat, making it a quick and satisfying baking project.

Getting the Batter into the Pan: A Smart Trick

Perhaps the trickiest part of making baked doughnuts is neatly getting the thick batter into the doughnut pan cavities. While you can certainly spoon it in, I have a favorite hack that makes the process much cleaner and easier: use a large ziplock bag! Simply pour your prepared doughnut batter into the bag, then snip off one of the bottom corners with a pair of scissors. You can then use the bag like a piping bag to neatly squeeze the batter into each doughnut cavity. This method significantly reduces mess and prevents batter from spilling, ensuring perfectly shaped doughnuts every time.

The Secret to a Perfect Chocolate Glaze

A whisk with chocolate glaze that's perfect for dipping chocolate doughnuts in.

The chocolate glaze is truly the crowning glory of these doughnuts, adding an irresistible layer of sweetness and a beautiful finish. Achieving this decadent glaze is incredibly simple: just whisk together a few key ingredients – icing sugar, rich cocoa powder, a touch of cream, and a hint of corn syrup. The corn syrup is your secret ingredient here, imparting a beautiful, professional-looking shine to your glaze that makes these homemade treats look like they came straight from a gourmet bakery. And trust me, once you taste them, you’ll agree they taste even better!

So, how will you be celebrating your day? I sincerely hope it involves indulging in these magnificent baked double chocolate doughnuts! They are the perfect way to bring a little extra sweetness and joy into your home.

Expert Tips for Flawless Baked Doughnuts

  • Don’t Overmix: Once you combine the wet and dry ingredients, mix just until no dry streaks remain. Overmixing can lead to tough doughnuts.
  • Room Temperature Ingredients: Ensure your egg, buttermilk, and melted butter are at room temperature. This helps the ingredients combine smoothly and creates a more uniform batter and a better texture.
  • Proper Pan Preparation: Always spray your doughnut pan thoroughly with non-stick cooking spray, even if it’s non-stick. This guarantees easy release and prevents any sticking.
  • Filling the Pan: The ziplock bag method is highly recommended for even filling and less mess. If using a spoon, fill each cavity about two-thirds full.
  • Checking for Doneness: Baked doughnuts are done when they spring back lightly when touched, or a toothpick inserted comes out clean. Be careful not to overbake, as this can make them dry.
  • Cooling is Key: Allow doughnuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Dipping warm doughnuts in glaze can cause the glaze to melt and become runny.
  • Adjusting Glaze Consistency: If your glaze is too thick, add more cream a teaspoon at a time. If it’s too thin, add a bit more icing sugar. You want a consistency that’s thick enough to coat the doughnut but still pourable.
  • Sprinkles Immediately: If using sprinkles, add them right after dipping the doughnuts in the glaze, while the glaze is still wet, so they adhere properly.

Creative Variations and Storage Solutions

Doughnut Variations:

  • Chocolate Chip Delight: Fold in 1/4 cup of mini chocolate chips into the batter for an extra burst of chocolate in every bite.
  • Nutty Crunch: Sprinkle chopped nuts (like pecans or walnuts) on top of the wet glaze for added texture and flavor.
  • Espresso Kick: Add 1 teaspoon of instant espresso powder to the dry ingredients to deepen the chocolate flavor and add a subtle coffee note.
  • Peppermint Twist: During the holidays, add a few drops of peppermint extract to the glaze and top with crushed candy canes for a festive treat.

Storage Tips:

These delicious baked doughnuts are best enjoyed fresh, ideally on the day they are made. However, if you have any leftovers, they can be stored in an airtight container at room temperature for up to 2-3 days. For longer storage, you can freeze unglazed doughnuts for up to 1 month. Thaw them at room temperature and then apply the glaze just before serving for the best results.

Ingredients

For the Doughnuts

  • 3/4 cup all-purpose flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt, to taste
  • 2 and 1/2 tablespoons melted butter, cooled to room temperature
  • 1 egg
  • 1/4 cup packed brown sugar
  • 3 tablespoons granulated sugar
  • 1 and 1/2 teaspoons vanilla
  • 2/3 cup buttermilk, or 1 teaspoon vinegar mixed with 2/3 cup cow’s milk

For the Glaze

  • 3/4 cup icing sugar
  • 3 tablespoons cocoa
  • 3-4 tablespoons cream
  • 2 teaspoons corn syrup, light or dark
  • sprinkles, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 6-cavity doughnut pan with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt.
  3. In a separate medium bowl, whisk together the melted butter, egg, sugars, vanilla, and buttermilk.
  4. Add the dry ingredients into the wet mixture and whisk until just combined. The batter will be thick.
  5. Spoon the batter into the prepared doughnut pan. Alternatively, pour the batter into a ziplock bag, cut off a bottom corner, and pipe the batter into the prepared tin.
  6. Bake for 8-10 minutes. The doughnuts should spring back lightly when touched, or an inserted toothpick should come out clean.
  7. Allow doughnuts to cool in the pan for 5-10 minutes, then carefully remove them from the pan and continue cooling completely on a wire rack.
  8. While the doughnuts are cooling, prepare the glaze. Whisk together the icing sugar, cocoa, and about 2 tablespoons of cream. Add the corn syrup and slowly add the remaining cream until the glaze is smooth and reaches your desired consistency.
  9. Once the doughnuts are cooled, dip the top of each doughnut into the glaze and immediately decorate with sprinkles, if desired.
