Chocolate Gingerbread Cake

  • 2 cups all-purpose flour (250 grams)
  • ¾ cup cocoa powder (60 grams)
  • 2½ teaspoons ground ginger
  • 1½ teaspoon cinnamon

  • ¼ teaspoon ground cloves
  • 1½ teaspoons baking powder

  • ½ cup unsalted butter (112 grams), softened
  • ¼ cup vegetable oil (60 ml), or canola oil
  • 1 cup granulated sugar (200 grams)
  • ½ cup brown sugar (105 grams)
  • 3 large eggs
  • ½ cup molasses, cooking or fancy, do not use blackstrap
  • 2 teaspoons vanilla extract
  • 1 cup sour cream (240 ml), full-fat, room temperature
  • ½ cup boiling water (120 ml)

  • 4 ounces dark chocolate (112 grams), I used 50%, semi-sweet chocolate works too, about 2/3 cup chocolate chips
  • ½ cup whipping cream, 33-35% MF

Instructions

Chocolate Gingerbread Bundt Cake

  1. Preheat the oven to 350℉ (180℃). Lightly grease a 12-cup bundt pan. We recommend using pan release – you can either use store-bought or make your own (instructions are included in the recipe notes below). Ensure you get into every crease and curve of the bundt pan. A pastry brush is ideal for this task.
  2. In a medium bowl, sift together the all-purpose flour, cocoa powder, ground ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt. Whisk the dry ingredients thoroughly to ensure everything is evenly combined and lump-free. Sifting is essential for a smooth batter.
  3. In a separate large mixing bowl, cream together the softened butter and both granulated and brown sugars until the mixture is light and fluffy. Then, beat in the vegetable or canola oil until fully incorporated.
  4. Add the vanilla extract to the butter mixture. Next, incorporate the eggs one at a time, beating well after each addition until just combined. After each egg, stop the mixer and scrape down the sides and bottom of the bowl to ensure uniform mixing.

Between each one-third addition of dry ingredients, beat in half of the room temperature sour cream. After each addition, scrape down the sides and bottom of the bowl.   1. If using a chocolate bar or baking squares, finely chop the chocolate before proceeding. Chocolate chips can be used as is.
  2. Place the chopped chocolate or chocolate chips into a heatproof bowl.
  3. Heat the whipping cream until it is steaming and just barely simmering around the edges – almost boiling. This can be done in short intervals in the microwave or in a small saucepan over low heat, stirring gently to prevent burning.
  4. Pour the hot cream directly over the chocolate in the heatproof bowl. Let it sit undisturbed for about 2-4 minutes to allow the chocolate to melt. Then, whisk gently until the mixture is smooth, glossy, and fully combined.
