  • Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats.
  • In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Set aside.
  • In a separate large bowl, beat together the butter and brown sugar until creamy (sugar granules are fine – but there shouldn’t be lumps of sugar).
  • Beat the egg, additional egg yolk, and vanilla extract into butter mixture.
  • Mix the dry ingredients into the butter mixture. I typically do this about 1/2 at a time, starting with the mixer on a low speed to avoid a flour mess. Mix until just combined.
  • Form the dough into balls with about 1.5 tablespoons of dough each (I use a medium cookie scoop). Roll the dough into a ball, then roll each cookie dough ball in the granulated or raw sugar. To do this, I pour the sugar onto a small plate then roll the cookie dough ball in the sugar to coat evenly.
  • Place the cookie dough balls about 2 inches (5 cm) apart on the lined cookie sheets.
  • Bake 1 sheet at a time in the middle of the preheated oven. The cookies will bake for about 8-11 minutes, or until the tops look just set and the edges are lightly golden. Avoid overbaking for a chewier texture.
  • Cool the cookies on the cookie sheet for at least 10 minutes before carefully transferring to a wire rack to continue cooling completely.
