What is Banoffee Pie? And Why a Cheesecake Twist?

For those unfamiliar, banoffee pie is a quintessential English dessert that typically features a crunchy biscuit base, a layer of sliced bananas, rich toffee (caramel) made from condensed milk, and a generous topping of whipped cream. The name itself is a portmanteau of “banana” and “toffee,” perfectly describing its core ingredients. It’s renowned for its incredible blend of sweet, mellow, and creamy flavors.

Our Banoffee Cheesecake takes this classic concept and infuses it with the irresistible creaminess of a baked cheesecake. Instead of merely layering bananas, we incorporate mashed ripe bananas directly into the cheesecake filling, creating an unparalleled banana flavor that permeates every bite. This innovative approach yields a dessert that is not just delicious, but also offers a more sophisticated texture and presentation than the traditional pie. It’s the ultimate upgrade for any banana dessert enthusiast!

Crafting Your Decadent Banoffee Cheesecake: A Step-by-Step Guide

Creating this magnificent cheesecake is a rewarding process, and with our detailed instructions, you’ll achieve perfect results. The journey begins with selecting the right ingredients and understanding key techniques to ensure a smooth, crack-free, and incredibly flavorful cheesecake.

Essential Tips for Success: Room Temperature Ingredients & The Water Bath Method

Like any exceptional cheesecake, success hinges on starting with ingredients at room temperature. This allows cream cheese, sour cream, and eggs to blend smoothly and incorporate air efficiently, resulting in a velvety-smooth batter free of lumps. Aim to take these items out of the refrigerator at least 30 to 60 minutes before you plan to begin mixing.

Another crucial technique for achieving a perfectly creamy, crack-free cheesecake is the water bath method (bain-marie). This method provides a moist, even heat environment in the oven, preventing the cheesecake from drying out and cracking. It’s a simple step that makes a dramatic difference in the final texture of your banana cheesecake.

To prepare your springform pan for a water bath:

  1. Start by wrapping the outside of your 9-inch (23 cm) springform pan. I highly recommend using a disposable oven bag (the kind used for turkeys) or a slow cooker liner as a first layer. This provides an excellent waterproof barrier.
  2. Next, securely wrap the pan with heavy-duty aluminum foil at least three to four times. Ensure all sides and seams are thoroughly covered to prevent any water from seeping in. Taking this extra precaution will safeguard your crust and cheesecake from getting soggy.

The Perfect Biscuit Crust: Foundation of Flavor

A sturdy and flavorful crust is the foundation of any great cheesecake. For this banoffee rendition, we opt for digestive biscuits (or graham crackers for a similar effect), which provide a subtly sweet and crumbly base that complements the creamy filling and caramel topping beautifully. Baking the crust separately ensures it stays wonderfully crisp.

  1. Combine finely crushed digestive biscuits (or graham cracker crumbs) with a touch of brown sugar and melted unsalted butter. The brown sugar adds an extra layer of warmth and a hint of molasses that pairs perfectly with the banoffee profile.
  2. Press this mixture firmly and evenly into the bottom of your prepared springform pan, creating a slight lip around the edges. This “lip” helps contain the filling and provides a nice edge to each slice.
  3. Bake the crust on its own for approximately 8-10 minutes. This crucial step toasts the crumbs, enhancing their flavor and ensuring a satisfyingly crunchy texture that won’t get soggy under the creamy filling.

Crafting the Creamy Banana Cheesecake Filling

While the crust bakes, it’s time to prepare the star of the show: the incredibly smooth and banana-infused cheesecake filling. This recipe distinguishes itself by incorporating mashed bananas directly into the cream cheese mixture, ensuring a deep, authentic banana flavor throughout the cheesecake.

  1. In a very large mixing bowl, combine the full-fat cream cheese, both brown and granulated sugars, and cornstarch (also known as cornflour in the UK). Beat these ingredients together for at least 3 minutes, or until the mixture is incredibly smooth and creamy with no discernible lumps. Remember to occasionally stop the mixer and scrape down the bottom and sides of the bowl to ensure everything is thoroughly incorporated.
    • Using brown sugar in addition to white sugar is a special touch in this recipe. It significantly enhances the natural banana flavor and creates a deeper, more caramelized note that complements the future caramel topping perfectly.
    • The cornstarch is vital in this recipe. Given the added moisture from the mashed bananas, cornstarch acts as a thickener, helping the cheesecake to set properly and maintain its structure without becoming too soft or watery. It’s a key ingredient for achieving that ideal cheesecake texture.
  2. Next, gently mix in the mashed bananas, sour cream, and vanilla extract. Take care in selecting your bananas: they should be ripe with visible brown spots, indicating peak sweetness and flavor. However, avoid overly bruised or black bananas. Before mashing, always cut out any black bruises and, if possible, remove the tiny black “spines” or seeds from the center of the banana. This ensures your cheesecake batter is beautifully uniform and free of dark specks.
    • After adding the mashed bananas, it’s normal to see some small lumps from the fruit. The crucial point is that there should be no lumps of cream cheese, indicating a well-mixed base.

  1. Finally, gently fold in the whisked eggs. It’s best to add them in two stages. Crucially, mix only until just combined. Overmixing the batter after the eggs have been added can introduce too much air, which can cause the cheesecake to puff up too much during baking and then crack as it cools. Slow and gentle is the key here.
  2. Pour the prepared cheesecake batter over the pre-baked biscuit crust in your foil-wrapped springform pan. Carefully place this springform pan into the center of a larger roasting pan. Then, pour about 1 inch (2-3 cm) of boiling water into the roasting pan, ensuring the springform pan is surrounded by water. This creates the essential water bath.

  1. Bake the cheesecake (still in its water bath within the roasting pan) in your preheated oven for approximately 50-60 minutes. The cheesecake is done when the edges appear set, but the center still has a slight, delicate wobble, much like a firm jelly or pudding, but not a liquid shake. This indicates perfect creaminess.

Once baked, the cooling process is equally important. Allow the cheesecake to cool slowly in the oven with the door ajar for about 15 minutes. This gradual cooling prevents drastic temperature changes that can lead to cracks. After this, remove it from the oven and cool completely at room temperature. Finally, for that signature firm and creamy texture, the cheesecake needs to chill in the refrigerator for a minimum of 6 hours, or ideally, overnight. This makes it an excellent make-ahead dessert, perfect for entertaining guests!

Irresistible Caramel Toffee Sauce

No banoffee dessert is complete without a generous layer of luscious caramel. While you can certainly use your favorite store-bought caramel, we highly recommend making the included Homemade Caramel Toffee Sauce. It’s surprisingly simple to prepare and offers a depth of flavor that elevates this cheesecake to new heights.

Our toffee caramel sauce is crafted from a rich blend of brown sugar, butter, and heavy cream, finished with a hint of vanilla extract and a pinch of sea salt to balance the sweetness. The result is a smooth, glossy, and utterly addictive sauce that truly captures the essence of banoffee.

You have options for serving: you can pour the entire batch of warm caramel directly over the chilled cheesecake for a stunning presentation, or, for a more interactive experience, serve the caramel in a gravy boat or small pitcher, allowing each guest to generously top their own slice. This ensures everyone gets their desired amount of that golden goodness.

The Finishing Touch: Fluffy Whipped Cream & Garnish

To complete the banoffee experience, a cloud of freshly whipped cream is indispensable. You can create a grand, fluffy topping over the entire cheesecake, mirroring the traditional banoffee pie. However, for an extra touch of elegance, consider piping decorative rosettes around the edges of the cheesecake. A star tip, such as a Wilton 1M, works beautifully for this. Alternatively, simply add a dollop of whipped cream to each slice just before serving.

For garnish, dried banana slices offer a delightful textural contrast and a beautiful visual appeal without the browning issues that fresh banana slices can have. A sprinkle of cocoa powder or chocolate shavings can also add a sophisticated finish.

Instructions

Preparation

  1. Take the cream cheese, sour cream, and eggs out of the fridge about 30-60 minutes before you begin to ensure they reach room temperature.
  2. Preheat your oven to 325°F (170°C).
  3. Prepare your 9-inch (23cm) springform pan for the water bath. First, wrap the outside with a disposable oven bag or slow cooker liner. Then, wrap the entire pan securely with heavy-duty aluminum foil at least 3-4 times, ensuring the bottom and sides are completely covered and sealed to prevent water from entering.

Biscuit Crust

  1. In a small bowl, combine the digestive biscuit crumbs, brown sugar, and melted butter. Mix thoroughly until the crumbs are evenly moistened and resemble wet sand.
  2. Press the mixture firmly into the bottom of the prepared springform pan. Use the back of a spoon or your fingers to create an even layer and a slight lip around the edges of the pan.
  3. Bake the crust in the preheated oven for 8 minutes. Remove it from the oven, but keep the oven turned on.

Cheesecake Filling

  1. In a large mixing bowl, using an electric mixer, beat together the softened cream cheese, brown sugar, granulated sugar, and cornstarch (cornflour). Continue beating for at least 3 minutes until the mixture is completely smooth and creamy, with no lumps of cream cheese. Remember to stop occasionally and scrape down the bottom and sides of the bowl to ensure even mixing.
  2. Gently beat in the mashed bananas, sour cream, and vanilla extract. Before mashing, ensure your bananas are ripe with brown spots, and remove any bruises or black seeds from the center for the best texture and appearance.
  3. In a separate small bowl, whisk the eggs lightly. Then, gently incorporate the whisked eggs into the cheesecake batter. You can do this by hand with a wire whisk or with the electric mixer on the lowest speed. Mix only until just combined; overmixing after the eggs are added can lead to cracks.
  4. Carefully pour the cheesecake batter over the pre-baked biscuit crust in the foil-wrapped springform pan. Place the springform pan in the middle of a large roasting pan. Pour approximately 1 inch (2-3 cm) of boiling water into the roasting pan, ensuring the water surrounds the springform pan.
  5. Carefully transfer the roasting pan (with the cheesecake inside) to the preheated oven. Place it on a rack positioned about 1/3 from the bottom of the oven. Bake for about 50-60 minutes, or until the edges of the cheesecake appear set and the center still has a slight, delicate wobble (like a firm pudding, not liquid).
  6. Once baked, turn off the oven and prop the oven door open slightly. Allow the cheesecake to cool slowly in the oven for about 15 minutes. This gradual cooling helps prevent cracks. Then, remove the roasting pan from the oven and let the cheesecake cool completely at room temperature.
  7. Once the cheesecake has reached room temperature, remove the springform pan from the roasting pan. Cover the springform pan with plastic wrap or foil and refrigerate for at least 6 hours, or ideally overnight, to allow it to fully set.

Caramel Toffee Sauce

  1. Gently warm the heavy cream in the microwave or a small saucepan over low heat until it’s warm to the touch but not boiling. Set aside.
  2. In a separate medium saucepan, combine the cubed unsalted butter, brown sugar, and golden syrup (or corn syrup). Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar is fully dissolved and the mixture is smooth.
  3. Carefully whisk in the warmed heavy cream. Remove the saucepan from the heat, then whisk in the vanilla extract and sea salt. Stir until fully combined. Allow the sauce to cool completely before using. The sauce can be stored in an airtight glass jar in the fridge for up to a week.

Topping & Serving

  1. When you’re ready to serve, beat the whipping cream until stiff peaks form.
  2. Remove the chilled cheesecake from the fridge. Gently run a thin knife around the inner edge of the springform pan to loosen the cheesecake. Unclasp and remove the outer ring of the pan. If there is any condensation on the top of the cheesecake, gently blot it with a paper towel.
  3. Pour the cooled caramel sauce evenly over the top of the cheesecake. For an elegant touch, consider pouring about half of the sauce over the cheesecake and serving the remainder in a gravy boat, allowing guests to add extra caramel to their slices if desired.
  4. Transfer the whipped cream to a piping bag fitted with a star tip (e.g., Wilton 1M) and pipe decorative rosettes around the edges of the cheesecake. Optionally, garnish with dried banana slices or a dusting of cocoa powder. Alternatively, you can simply add a dollop of whipped cream to each individual slice after cutting.
  5. To slice the cheesecake cleanly, use a thin, sharp knife. For best results, wipe the knife clean with a damp cloth between each slice. Ensure you cut all the way through the crunchy biscuit crust. Serve immediately and enjoy!

Notes for a Perfect Cheesecake

  1. Digestive Biscuits: If digestive biscuits are unavailable, graham cracker crumbs are an excellent substitute. You might need to adjust the melted butter slightly, adding 1-2 extra tablespoons, until the crumbs hold together when squeezed in your palm.
  2. Cream Cheese: Always use full-fat, brick-style cream cheese. Avoid light, low-calorie, low-fat, or spreadable varieties, as they will not yield the correct texture and may cause the cheesecake to be runny.
  3. Bananas: The ideal bananas for this recipe are ripe with brown spots, indicating maximum sweetness and flavor. However, they should still be primarily yellow (about 40-50% yellow) and not entirely black. Measure the mashed bananas *after* mashing. Remember to cut out any bruised spots and remove the small black seeds/spines from the center of the banana before mashing to ensure a smooth, appealing filling.
  4. Make-Ahead Tips: This banoffee cheesecake is perfect for making in advance! The cheesecake can be fully baked, cooled, and chilled the day before you plan to serve it. Simply cover it tightly and refrigerate. The homemade toffee caramel sauce can also be prepared up to 1 week prior. Once cooled, store it in an airtight glass jar in the refrigerator. If the sauce becomes too thick to pour after refrigeration, gently warm it in a saucepan over low heat, stirring occasionally, or in the microwave in 45-second intervals on medium power until it reaches a pourable consistency.
  5. Nutrition: The nutritional information provided is an estimate only. It is based on one slice of cheesecake, assuming the cheesecake is cut into 14 uniform pieces and all the caramel toffee sauce and whipped cream are used. Actual values may vary based on specific ingredients and preparation methods.
