  • 3/4 cup ground almonds

  • pinch of salt
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup unsalted butter, cut into cubes and very cold

For the Cherry Layer

  • 2 cups pitted fresh cherries, cut in half (measure after pitting)
  • 3 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 1 tablespoon granulated sugar, optional, for sprinkling on top
