As the days grow longer and the sun shines brighter, spring and summer unveil nature’s sweetest bounty – fresh berries. This is undeniably the finest time of year for baking delightful fruit crisps, crumbles, and pies. What makes these bars truly exceptional is their thoughtfully constructed layers. They begin with a robust, buttery shortbread base that provides a sturdy yet tender foundation. Nestled above is a thick, succulent layer of perfectly ripened strawberries, bursting with natural sweetness. Finally, a generous, golden brown sugar and cinnamon streusel topping provides the most satisfying crunch. If you’re someone who always wishes for more of that wonderfully buttery, crumbly topping when enjoying a fruit crisp, then these strawberry bars are undoubtedly crafted with you in mind. They strike a perfect balance, offering a delightful treat that pairs beautifully with a warm cup of coffee in the afternoon or transforms into an effortless, show-stopping summer dessert when served with a scoop of vanilla bean ice cream.
Crafting Your Perfect Strawberry Crumb Bars: A Detailed Guide
Achieving the ideal Strawberry Crumb Bar requires attention to each distinct layer, ensuring they perfectly complement one another in flavor and texture.
The Buttery Shortbread Base
The foundation of these delicious bars is a shortbread-esque base, crafted from simple, high-quality ingredients: butter, a touch of sugar, all-purpose flour, and a hint of cornstarch. The inclusion of cornstarch is a secret weapon here, contributing to a wonderfully tender crumb while ensuring the base remains firm enough to support the luscious strawberry layer without becoming soggy. It creates a texture that’s rich and crumbly yet holds its shape impeccably. This base bakes for approximately 20 minutes on its own before the other layers are added. This crucial pre-bake step allows the crust to firm up and lightly crisp, creating an essential barrier that locks in the moisture from the fruit, guaranteeing a perfectly structured bar every time.
The Juicy Strawberry Layer
For the star of the show – the strawberry layer – simplicity is key to letting the fresh fruit truly shine. We begin by chopping fresh, ripe strawberries into bite-sized pieces. These are then gently tossed with a small amount of sugar to enhance their natural sweetness and cornstarch, which acts as a thickening agent, preventing the fruit from becoming too watery during baking. To add an extra dimension of bright, aromatic flavor, I always recommend incorporating a little orange zest. The subtle citrus notes from the orange zest beautifully complement and elevate the sweet, tart flavor of the strawberries, creating a truly divine pairing. Lemon zest can also be used for a slightly tangier alternative, offering a similar burst of freshness.
The Irresistible Cinnamon Streusel Topping
No crumb bar is complete without a generous, crunchy streusel topping, and this recipe doesn’t hold back! My philosophy is that you can never have too much streusel, and trust me, no one will complain about the abundance of this delicious crumble. This streusel is designed to form large, satisfying crumbles with a delightful crunch, while its delicate butter and cinnamon flavor perfectly harmonizes with the sweet strawberries. It might appear to be a substantial amount of topping before baking, but as the bars bake to golden perfection, some of the streusel will gently melt and sink into the bubbling strawberry mixture, creating pockets of soft, sweet fruit and crunchy topping. This interplay of textures is what makes each bite so incredibly satisfying.
Expert Baking Tips for Flawless Crumb Bars
To ensure your Strawberry Crumb Bars turn out perfectly every time, keep these essential baking tips in mind:
- Opt for Fresh Berries: For this recipe, I strongly advise against using frozen berries. Frozen fruit contains significantly more moisture, which can leach out during baking and result in soggy bars, compromising the integrity of the shortbread base. Fresh, ripe strawberries are essential for the best texture and flavor.
- Scaling the Recipe: This recipe is designed for an 8×8 inch pan, yielding 9 generous bars. If you’re baking for a larger crowd, you can easily double the recipe and bake it in a 9×13 inch pan. Be aware that doubling the recipe will necessitate a slightly longer baking time to ensure the center is cooked through and the streusel is golden.
- Pan Size Matters: Stick to the recommended pan sizes. I do not recommend making these bars in a 9×9 inch pan, as there isn’t quite enough batter for both the base and topping to fill the larger surface area adequately, leading to thinner, less satisfying layers.
- The Art of Cooling: Patience is a virtue when it comes to cutting these bars. It is absolutely crucial that the bars are 100% cooled to room temperature before you attempt to slice them. This cooling period allows the fruit filling to set and the shortbread base to firm up completely. If you cut into them too soon, they will likely crumble and fall apart, making it difficult to achieve clean, perfect squares. Allow at least 4 hours, or ideally, cool them in the refrigerator for a quicker set if time is of the essence.
- Achieving Clean Slices: Once fully cooled, use the parchment paper or foil overhang to carefully lift the entire slab of bars out of the pan. Place it on a sturdy cutting board. For clean, neat slices, use a long, sharp chef’s knife. A dull knife or a butter knife will tear the soft fruit layer and crumbly topping, resulting in messy bars. Clean your knife occasionally between slices for the tidiest results.
- Testing for Doneness: You’ll know your crumb bars are ready when the streusel topping has turned a beautiful golden brown, and you can see the strawberry layer beneath bubbling enthusiastically. The edges of the shortbread base should also appear lightly browned and set.

Ingredients
For the Base
- 3/4 cup unsalted butter, softened to room temperature
- 1/3 cup white sugar
- 1 1/2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1/4 teaspoon salt, to taste
For the Strawberry Layer
- 2 cups sliced strawberries*
- 1 tablespoon white sugar
- 2 teaspoons cornstarch
- 2 teaspoons orange zest, or lemon zest
For the Streusel Topping
- 3/4 cup all-purpose flour
- 1/3 cup packed brown sugar, light or dark (I used light)
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 300°F degrees (150°C).
- Line an 8×8 inch square baking pan with parchment paper or aluminum foil, leaving an overhang on each side for easy removal. If using aluminum foil, lightly grease with butter or non-stick cooking spray.
-
Make the Base
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Reduce the mixer speed to low and gradually beat in the all-purpose flour, cornstarch, and salt until just combined. The mixture will be crumbly.
- Press the crumbly mixture firmly and evenly into the bottom of the prepared pan.
- Bake for 20 minutes. Remove from the oven and increase the oven temperature to 350°F (175°C).
-
Strawberry Layer
- In a medium bowl, gently toss together the sliced strawberries, sugar, cornstarch, and orange zest until the strawberries are evenly coated.
-
Crumb Topping
- In a separate medium bowl, stir together the flour, brown sugar, white sugar, cinnamon, and salt until thoroughly combined.
- Pour in the melted butter and stir until the mixture resembles wet or damp sand, forming distinct crumbles.
-
Assemble and Bake
- Carefully spoon the prepared strawberry mixture evenly over the pre-baked shortbread base. Avoid adding any excess juice from the bottom of the bowl onto the base, as this can make it soggy.
- Evenly crumble the streusel topping over the strawberry layer. You should be able to make a loose fist around the streusel and release it to form larger crumbles for an ideal topping.
- Bake for 30-35 minutes, or until the streusel topping turns a beautiful golden brown and the strawberry layer underneath is visibly bubbling.
- Remove the pan from the oven and allow the bars to cool completely to room temperature before slicing, which can take about 4 hours or more. This is essential for the bars to set properly and prevent them from falling apart.
- To slice the bars, use the parchment paper/aluminum foil overhang to lift the entire slab out of the pan. Place it on a cutting board and slice into individual bars using a thin, sharp knife (do not use a butter knife).
Notes
- You’ll need approximately 1 lb (454 grams) of fresh strawberries in total, measured before hulling and slicing.
- Store any leftover bars in an airtight container in the refrigerator for up to 3 days to maintain freshness.
- Nutrition information provided is an estimate based on 1 bar, assuming the pan is cut into 9 equal portions.
