Choosing Your Cake Style: Sheet Cake vs. Layer Cake

One of the most appealing aspects of this Lemon Blueberry Cake recipe is its incredible versatility. Whether you’re a seasoned baker looking for a showstopper or a beginner seeking a delicious yet manageable dessert, this recipe can be adapted to suit your needs and preferences. Let’s explore the benefits of both the sheet cake and layer cake options:

The Convenient 9×13 Inch Sheet Cake

Opting for the 9×13 inch sheet cake format is perfect for busy schedules, potlucks, or when you need to feed a crowd with minimal effort. This single-layer approach eliminates the need for leveling, stacking, and extensive frosting techniques, making the baking process incredibly straightforward. The cake bakes uniformly, retains maximum moisture, and is effortlessly transportable. Simply spread your luscious cream cheese frosting over the cooled cake, slice, and serve! It’s a no-fuss option that doesn’t compromise on flavor or deliciousness, ensuring everyone gets a generous, delightful piece.

The Elegant Layer Cake

For those special occasions that call for a touch of elegance and visual appeal, transforming this recipe into a beautiful layer cake is an absolute must. Our updated instructions provide guidance for creating three perfectly sized 8-inch round layers that stack gracefully. While it requires a little more attention to detail in terms of cooling, leveling, and frosting, the result is a truly stunning centerpiece. A layer cake allows for impressive height, multiple layers of moist cake interspersed with creamy frosting, and provides a wonderful opportunity for creative decoration. It’s ideal for birthdays, anniversaries, Easter brunch, or any event where you want to make a memorable statement with your dessert.

Regardless of the style you choose, the core recipe delivers the same irresistible lemon blueberry flavor and tender crumb that has made it a reader favorite for years. Our detailed steps below will guide you through either option with confidence.

Mastering the Bake: A Detailed Step-by-Step Guide

Baking this Lemon Blueberry Cake is a rewarding experience, and with these detailed steps and accompanying tips, you’re set for success. Please read through all instructions and refer to the photos for visual guidance before you begin.

  1. Prepare Your Oven and Pans: Begin by preheating your oven to 350°F (180°C). Proper pan preparation is crucial for easy release and a beautifully shaped cake.
    • If using a 9×13 inch pan, lightly grease the bottom and sides with butter or baking spray, then dust with a thin layer of flour, tapping out any excess.
    • If making a layer cake (using three 8-inch round pans), first, line the bottom of each pan with a round of parchment paper. This is a vital step that prevents the cake layers from sticking, far more reliable than just greasing and flouring the bottom. Then, grease and flour the sides of each pan as you would for a sheet cake.
  2. Combine the Dry Ingredients: In a medium-sized bowl, sift together the cake flour, baking powder, baking soda, and salt. Sifting is especially important with cake flour, which tends to be lumpy, ensuring a light and airy texture in your final cake. After sifting, give them a quick whisk to fully combine and aerate the mixture, then set aside.
  3. Prepare the Milk and Lemon Juice Mixture: In a separate small bowl or measuring jug, whisk together the buttermilk and freshly squeezed lemon juice with a fork. The acidity from the lemon juice will react with the baking soda in the dry ingredients, contributing to the cake’s tender crumb and subtle tang. Set this mixture aside for later.

  1. Cream the Butter, Sugar, and Lemon Zest: In a large mixing bowl, using an electric mixer, beat the softened unsalted butter, granulated sugar, and fresh lemon zest together. Continue beating for about 2-3 minutes, or until the mixture becomes wonderfully light, fluffy, and noticeably paler in color. This creaming process incorporates air, which is essential for a light cake texture, and fully infuses the butter with the aromatic lemon zest.
  2. Beat in the Eggs and Vanilla: Add the vanilla extract to the creamed mixture. Then, carefully beat in the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. This methodical approach helps prevent overmixing the batter and maintains the emulsification, leading to a more stable and tender cake crumb. Remember to scrape down the sides of the bowl with a spatula after each addition to ensure everything is evenly combined.

  1. Alternate Mixing Dry Ingredients and Milk: With your mixer on low speed, begin incorporating the dry ingredients and the buttermilk-lemon juice mixture into the butter mixture. Add about one-third of the flour mixture, mixing until just combined. Follow this with about half of the buttermilk mixture, again mixing until just incorporated. Scrape down the sides and bottom of the bowl. Repeat this process: add another third of the flour, then the remaining half of the buttermilk mixture. Finally, add the last third of the flour mixture. This alternating method is key to developing a uniform, tender cake crumb and helps prevent overmixing, which can lead to a tough cake. Finish with a few gentle stirs by hand to ensure everything is perfectly combined without overworking the gluten.

The crucial alternating technique for combining wet and dry ingredients.
  1. Prepare and Fold in the Blueberries: In a small bowl, gently toss the fresh blueberries with 2 teaspoons of cake flour (or all-purpose flour). This simple step is a game-changer! Coating the berries in flour helps prevent them from sinking to the bottom of the cake during baking and significantly reduces the chance of their vibrant color bleeding into the batter, ensuring beautiful, distinct blueberry pockets. Once coated, very gently fold the blueberries into the prepared cake batter using a spatula. Overmixing here can crush the berries, so handle with care.
  2. Bake to Golden Perfection: Pour the carefully prepared batter evenly into your chosen pans.
    • For a 9×13 inch sheet cake: Bake for approximately 35-40 minutes.
    • For three 8-inch round layer cakes: Bake for about 25-30 minutes.

The cake is done when the top looks set and a wooden skewer or toothpick inserted into the center comes out clean or with just a few moist crumbs attached. Gently pressing on the top of the cake should feel firm and slightly springy, not gooey.

  3. Cooling Your Cakes: Allow the cakes to cool in their pans for at least 15-20 minutes on a wire rack before attempting to invert them. This cooling period is essential as it allows the cake to firm up, preventing breakage. If making a layer cake, be extra gentle during inversion. Once inverted, remove the parchment paper (if used) and allow the cakes to cool completely on the wire rack before frosting. Warm cakes will melt the frosting!

Crafting the Zesty Cream Cheese Frosting

Once your beautiful lemon blueberry cakes are baked and thoroughly cooled, it’s time to prepare the star topping: our irresistible cream cheese frosting. This frosting is not just any frosting; it’s a dreamy, velvety smooth confection with the most delectable hint of tang that perfectly complements the bright flavors of the cake. We incorporate a tiny bit of fresh lemon juice into the frosting, not enough to call it a “lemon frosting,” but just enough to enhance the cake’s citrus profile without overpowering it, creating a harmonious and refreshing taste experience.

For those undertaking the layer cake, a little extra preparation goes a long way in achieving a professional finish. After the cake layers have cooled completely, we highly recommend wrapping each layer tightly in plastic wrap and refrigerating them overnight, or for at least a few hours. Chilled cake layers are significantly firmer and much easier to handle, trim, and frost without crumbling. If your cake tops have developed a dome during baking, use a sharp serrated knife or a specialized cake leveler to gently saw off the rounded tops. This ensures that your cake layers sit perfectly flat on top of each other, creating a stable and visually appealing tiered cake.

The Essential Crumb Coat

When frosting a layer cake, the “crumb coat” is an indispensable technique for a pristine final finish. After stacking your trimmed and cooled cake layers, apply a very thin, even layer of cream cheese frosting over the entire cake – top and sides. This thin layer effectively “seals in” any loose crumbs, preventing them from mixing into your final, thick layer of frosting. Once the crumb coat is applied, place the cake in the refrigerator for about 20-30 minutes, allowing this initial layer to firm up. After it has set, you can then apply a generous, thick layer of frosting, creating beautiful swirls and a perfectly smooth exterior without any visible crumbs. This technique elevates your homemade cake to bakery-quality standards!

Essential Ingredients for a Perfect Lemon Blueberry Cake

The success of this Lemon Blueberry Cake lies in the quality and preparation of its ingredients. Understanding the role of each component is key to achieving that signature moist texture and vibrant flavor.

  • Real Unsalted Butter: This recipe demands real butter – not margarine or butter blends. Unsalted butter allows you to control the salt content in your baking, and its rich milk fat content provides unparalleled flavor and moisture to the cake. Ensure your butter is softened to room temperature, but not melted. This is critical for proper creaming with sugar, which incorporates air and creates a light cake structure.
  • Cake Flour: For an exceptionally soft, delicate, and never-dense cake crumb, cake flour is the preferred choice. It has a lower protein content than all-purpose flour, resulting in less gluten development and a more tender final product.

Cake Flour Substitute: If cake flour isn’t readily available, you can create a suitable substitute using all-purpose flour and cornstarch. For every cup of cake flour needed, measure out 2 tablespoons of cornstarch into your measuring cup, then fill the rest of the cup with all-purpose flour. Sift this mixture together at least three times to ensure even distribution and aeration. While this substitute works well, for the absolute best results, we highly recommend using genuine cake flour.

Important Note: Do NOT substitute all-purpose flour for cake flour in a 1:1 ratio without the cornstarch modification. Doing so will result in a cake that is dense and dry.

  • Buttermilk: Buttermilk is a secret weapon for achieving a super moist, tender, and incredibly soft cake. Its acidity reacts with the baking soda, contributing to a light rise and a fine crumb. Just like butter and eggs, ensure your buttermilk is at room temperature before use. You can achieve this by leaving it on the counter for about 15-20 minutes, or gently warming it in the microwave in short 10-second bursts on low-medium power.

Buttermilk Substitute: If you don’t have buttermilk, you can make a quick substitute by adding 1 tablespoon of fresh lemon juice or white vinegar to a liquid measuring cup, then filling the rest of the way to 3/4 cup with whole milk. Let it sit for 5-10 minutes until it slightly curdles. While this works, using real buttermilk is always preferred for optimal texture and flavor.

  • Fresh Lemon Juice & Lemon Zest: The vibrant, sunny flavor of this cake comes directly from fresh lemons. Always use freshly squeezed lemon juice – the bottled variety simply doesn’t deliver the same bright, tart, and non-sour flavor. Lemon zest, containing the fragrant oils from the peel, adds an intense aromatic burst that elevates the lemon flavor without adding excess liquid. You’ll need about 3 large lemons for this recipe; remember to zest them first, then juice them.
  • Fresh Blueberries: For the best results and a beautiful appearance, fresh blueberries are highly recommended. Fresh berries are less likely to sink to the bottom of the pan and are less prone to bleeding their color throughout the batter, preserving those distinct pockets of fruit. If you must use frozen blueberries, do not thaw them first; add them directly to the flour-tossed mixture while still frozen to help maintain their structure and prevent excessive bleeding. Be aware that frozen berries may slightly increase baking time.

Frequently Asked Questions About Lemon Blueberry Cake

Here are answers to some common questions you might have about baking and enjoying this delicious Lemon Blueberry Cake:

Q: Can I make this recipe as a 9-inch round cake?
A: Yes, absolutely! This recipe is perfectly scaled to yield a beautiful two-layer 9-inch round cake. When preparing your pans, be sure to line the bottom of each cake pan with parchment paper rounds, then grease and flour the sides. The baking time for 9-inch round layers will typically be shorter, around 21-25 minutes. Always perform the toothpick test to ensure they are fully baked.

Q: Can I turn this recipe into lemon blueberry cupcakes?
A: Indeed! This versatile batter makes fantastic cupcakes. Prepare your muffin tins with paper liners. Fill each cupcake liner approximately two-thirds full with batter. Bake at 350°F (180°C) for a shorter duration, typically 16-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. This recipe will yield about 24 delightful lemon blueberry cupcakes.

Q: How can I make this recipe ahead of time?
A: Planning ahead is easy with this cake! You can prepare both the cake and the frosting up to one day in advance.

  • For the Cake: Once the cake layers (or sheet cake) are completely cooled, wrap them tightly in plastic wrap to prevent drying and store them at room temperature overnight, or in the refrigerator.
  • For the Frosting: Store the prepared cream cheese frosting in an airtight container in the refrigerator. When you’re ready to frost, allow the frosting to come to room temperature for about 30-60 minutes. You may need to re-beat the frosting with your electric mixer for a minute or two to restore its creamy, spreadable consistency if it seems too stiff.

Unfrosted cake layers can also be wrapped individually and tightly, then placed in a freezer-safe bag and frozen for up to two months. Thaw them overnight in the refrigerator before frosting.

Q: What if my cake turns out dry?
A: A dry cake is often a sign of overbaking. Ensure you’re baking for the recommended time and always check for doneness using the toothpick test. Overmixing the batter can also lead to a tough, dry cake due to excessive gluten development; be sure to mix only until ingredients are just combined. Using room temperature ingredients (butter, eggs, buttermilk) is also crucial for creating a smooth emulsion that holds moisture.

Q: Why did my blueberries sink to the bottom?
A: This is a common issue! The best way to prevent blueberries from sinking is to toss them with a small amount of flour (as instructed in step 7) before folding them into the batter. This flour coating creates a barrier that helps the berries suspend more evenly throughout the cake. Also, ensure your batter isn’t too thin; a thicker batter provides more resistance against sinking. Using fresh blueberries is also preferable over frozen ones, as frozen berries release more moisture and can be heavier.

Q: My cream cheese frosting is too runny/too stiff. What should I do?
A: Frosting consistency can be adjusted!

  • Too runny: This usually happens if the cream cheese or butter was too warm, or too much liquid was added. You can add more sifted powdered sugar (a tablespoon at a time) until it thickens to your desired consistency. Chilling the frosting in the refrigerator for 15-30 minutes can also help it firm up.
  • Too stiff: If the frosting is too thick, it might have been over-chilled or not enough liquid was added. Add a tiny bit more whipping cream or milk (1 teaspoon at a time) and beat until it reaches a smooth, spreadable consistency.

Always ensure your butter and cream cheese are at the correct softened (but not melted) room temperature before starting.

Serving and Decoration Suggestions

This Lemon Blueberry Cake is stunning on its own, but a few simple touches can elevate its presentation even further. For a classic look, garnish your cake with a sprinkle of fresh blueberries and delicate curls of lemon zest. A few thin slices of fresh lemon on top can also add a bright, elegant touch. For a more rustic feel, simply dust the frosted cake with a light layer of powdered sugar. Serve slices slightly chilled for a firmer frosting, or at room temperature for a softer, more indulgent experience. This cake pairs wonderfully with a cup of tea or coffee, making it perfect for an afternoon treat or a delightful dessert after dinner.

Cream Cheese Frosting for a 9×13 inch Cake

  • 1/2 cup unsalted butter (112 grams), softened
  • 8 oz brick-style cream cheese (226 grams), full fat
  • 1 teaspoon lemon juice, freshly squeezed
  • 3 – 4 cups powdered sugar (330-440 grams), sifted
  • 1 tablespoon whipping cream, as needed

Cream Cheese Frosting for a Layer Cake

  • 1 1/2 teaspoons lemon juice, freshly squeezed
  • 4 1/2 – 5 1/2 cups powdered sugar (495 – 605 grams), sifted
  • 1-2 tablespoon whipping cream, as needed

Instructions

  • Preheat the oven to 350F (180C) degrees. Grease and flour a 9×13 inch cake pan. For a layer cake, line the bottom of the cake tins with rounds of parchment paper, then grease and flour the sides of the pans.
  • In a medium bowl sift together the flour, baking powder, baking soda and salt. Whisk together and set aside.
  • Combine the buttermilk and freshly squeezed lemon juice. Whisk with a fork and set aside.
  • In a large bowl beat together the butter, sugar and lemon zest until fluffy (about 2-3 minutes).
  • Add in the vanilla extract and beat in the eggs 1 at a time. Turn off the mixer and scrape down the sides of the bowl after each addition.
  • With the mixer on low speed, beat about 1/3 of the flour mixture into the butter mixture. Then mix in about 1/2 of the milk and lemon juice mixture. Turn off the mixer and scrape down the sides and bottom of the bowl. Repeat the process – beat in about 1/3 of the flour mixture, followed by the rest of the milk and lemon juice mixture. Lastly, beat in the last 1/3 of the flour mixture. Do not overmix.
  • Toss the blueberries with the 2 teaspoons of flour, then gently fold into the batter with a spatula or rubber spoon.
  • Pour the batter into the prepared pan/pans. Bake for 30-35 minutes for a 9×13 inch pan, or about 25-30 minutes for layer cakes. When done baking, the top should look set and an inserted toothpick comes out clean. If you gently press on the top of the cake it should feel firm and slightly springy to the touch, but not gooey.
  • Cool the cakes in the pan. If making a layer cake, be very, very careful when inverting the pans. Do not try to invert the cake pans while they are still hot.

Cream Cheese Frosting (same process for a 9×13 inch and a layer cake)

  • Beat the butter until soft, then mix in the cream cheese.
  • Add in the lemon juice and mix in 3 cups of the powdered sugar, starting with the mixer on low speed and then turning up to medium as it starts to combine.
  • Beat in the rest of the powdered sugar about 1/2 cup at a time until the desired sweetness and thickness is reached. If the frosting seems too thick, beat in 1 tablespoon whipping cream.

Decorating

  • For a 9×13 inch cake, frost the cooled cake and optionally decorate with blueberries and lemon slices.
  • For a layer cake, ensure that the layers are fully cooled first. (I recommend wrapping in plastic and refrigerating so that the layers are slightly firm). If the tops are domed, use a serrated knife or cake leveler to gently cut off the rounded top. Place one cake layer on the plate or cake stand that you plan to serve it on. Frost the top with about 3/4 cup frosting. Place the second cake layer on top and frost the top with another 3/4 cup of frosting. Then place the third cake layer on top. Frost the sides of the cake with a thin layer of frosting – the crumb coat – and place in the fridge for about 20-30 minutes. Once the thin layer of frosting has hardened, frost the sides and top of the cake with swirls of frosting. Optionally, decorate with fresh blueberries.
  • Slice with a thin, sharp knife.

Notes

  1. Cake Flour: If you don’t have cake flour, measure out 2 2/3 cups all-purpose flour. Add in 1/3 cup cornstarch (AKA cornflour in the UK). Sift together 3 times before using.
  2. Buttermilk: Can be substituted with whole milk (see section “Essential Ingredients for Success” for how to make a quick substitute with lemon juice/vinegar).
  3. Lemons: You will need about 3 large lemons for this recipe. Zest first, then squeeze the juice.
  4. Room Temperature Ingredients: The butter, eggs, and buttermilk should be at room temperature before using.
  5. Blueberries: I do not recommend using frozen blueberries because they are more likely to sink to the bottom of the cake and bleed color. They will also increase the bake time. If using frozen berries, do not thaw.
  6. Cream Cheese: Be sure to use full-fat, brick style cream cheese for the best frosting consistency.
  7. Nutrition: Details are an estimate only, based on 1 slice of a 9×13 inch cake with frosting, assuming the cake is sliced into 15 uniform slices.
  8. Storage: Unfrosted cake can be stored covered at room temperature overnight or wrapped tightly and stored in the fridge overnight. Frost the day you plan to serve. Leftovers can be stored in an airtight container in the fridge for up to 4 days. Fresh cake is always best. Unfrosted cake layers can be wrapped tightly (I recommend wrapping each layer individually so that they don’t stick together), then placed in a freezer bag and frozen for up to 2 months. Thaw in the fridge.
