  • 1/2 cup milk (120 ml), whole milk or 2% is best, room temperature

  • 1 – 1 1/2 teaspoons peppermint extract
  • 1/4 teaspoon salt
  • 3-5 tablespoons whipping cream (45-75 ml)
  • 3-4 drops red food coloring (optional, for pink frosting)
  • Crushed candy canes, for garnish

Instructions

Chocolate Peppermint Cupcakes

  1. Preheat your oven to 350°F (180°C). Line a 12-cavity muffin pan with paper liners.
  2. In a large bowl, thoroughly whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and granulated sugar until well combined.
  3. In a separate medium bowl, whisk together the vegetable oil, peppermint extract, room temperature egg, and milk until the egg is fully incorporated and no visible pieces remain.
