Chocolate Peanut Butter Buckeye Brownies

Inspired by classic buckeye candies, these buckeye brownies combine fudgy chocolate, a creamy peanut butter center, and a smooth chocolate ganache for a three-layer treat that peanut butter and chocolate lovers will adore.

Stack of 3 buckeye brownies

These bars are essentially a peanut butter cup layered over a chewy brownie. The base is a chewy, chocolate-forward brownie that is intentionally not overly rich so it supports the second layer: a buckeye-style peanut butter filling that’s sweet, slightly salty, and luxuriously creamy. A final pour of glossy chocolate ganache seals the top, giving you a balanced texture and flavor in every bite.

This recipe is made entirely from scratch rather than from boxed mixes. Because it builds three distinct layers—brownie, peanut butter filling, and chocolate topping—it takes a little extra time, but the steps are straightforward and the result is well worth the effort.

What Are Buckeyes?

Buckeye candies are a homemade confection popular during holidays in many households. They begin as a dense peanut butter mixture—somewhere between peanut butter fudge and the filling of a peanut butter cup—and are then partially dipped in chocolate so a small circle of peanut butter remains visible, resembling the nut of a buckeye tree. These brownies borrow that same peanut butter flavor profile and incorporate it as a middle layer rather than as individual candies.

Making Buckeye Brownies

Start with the brownie layer. The goal is a chewy texture—stable enough to support the peanut butter middle without becoming dry. Below is an overview of the process and tips to help you achieve reliable results.

  1. Prep. Preheat the oven and line a 9×13 inch pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter and chocolate slowly. Heat gently so the chocolate stays smooth and doesn’t seize. If you’re using a microwave, use short intervals and stir often. A double boiler also works well.
  3. Whisk in sugar, eggs, and vanilla. Allow the melted chocolate and butter to cool slightly before adding eggs so they don’t curdle.
  4. Fold in dry ingredients. Sift the cocoa powder and then stir in flour and salt until just combined to keep the brownies tender.
  5. Bake. Spread the batter in the prepared pan and bake until the top is set and a toothpick inserted near the center comes out with a few moist crumbs—about 23–30 minutes depending on your oven.

Once the brownie layer is baked and fully cooled, prepare the peanut butter filling.

  1. Beat the butter. Start by beating the softened unsalted butter until smooth and creamy.
  2. Add peanut butter, powdered sugar, salt, and vanilla. Use smooth peanut butter and sift the powdered sugar first to avoid lumps. Mix until the filling is homogeneous and spreadable.
  3. Spread the filling. Use an offset spatula or the back of a spoon to create an even layer of peanut butter filling over the cooled brownies.

Finish with a simple chocolate ganache for the topping.

  1. Melt the chocolate and butter gently. Combine finely chopped chocolate (or chips) with cubed butter in a heatproof bowl and melt slowly. If using a microwave, work in short intervals on reduced power and stir well between bursts. If using a double boiler, make sure the bowl doesn’t touch the water below.
  2. Pour and smooth. Pour the warm ganache over the peanut butter layer and spread quickly into an even sheet. Work efficiently so the ganache sets smoothly.

Recipe Tip

Allow the bars to set completely before slicing. They will firm up at room temperature in about 1–2 hours, or you can chill them in the refrigerator for roughly 1 hour to speed the process. Use the parchment overhang to lift the entire slab from the pan, place it on a cutting board, peel back the paper, and slice with a thin, sharp knife. Wipe the blade between cuts for clean edges.

Storage

Store finished brownies in an airtight container. At room temperature they’ll keep well for up to 4 days; refrigerated, they last up to 7 days. If you prefer to freeze them, wrap tightly and place in a freezer-safe bag or container for up to 2 months. When ready to enjoy, thaw in the refrigerator rather than at room temperature to preserve texture.

Prep: 30 mins
Cook: 25 mins
Cooling: 2 hrs
Total: 3 hrs
Servings: 18 brownies

Equipment

  • 9×13 inch (23 x 33 cm) baking pan

Ingredients

Brownie

  • 12 tablespoons unsalted butter (168 grams)
  • 3 ounces semi-sweet chocolate (85 grams), about 1/2 cup chocolate chips
  • 1½ cups granulated sugar (300 grams)
  • 3 large eggs, room temperature
  • ¼ cup cocoa powder (22 grams)
  • 1 cup all-purpose flour (125 grams)
  • ½ teaspoon salt

Peanut Butter Middle

  • ½ cup unsalted butter (112 grams), softened but not melting
  • 1½ cups smooth peanut butter
  • 2 cups powdered sugar (220 grams), sifted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Chocolate Topping

  • 10 ounces semi-sweet chocolate (283 grams), about 1½ cups chocolate chips
  • ½ cup unsalted butter (112 grams), cut into cubes

Instructions

Brownies

  • Preheat the oven to 350°F (180°C). Line a 9×13 inch pan with parchment paper, leaving an overhang for lifting the bars out later.
  • In a large bowl, melt together the butter and chocolate. In the microwave, use medium power and 20-second intervals, stirring between each. Or melt gently over a double boiler, ensuring the bowl does not touch the water.
  • Let the mixture cool for about 5 minutes. Whisk in the sugar, then the eggs and vanilla, stirring until the eggs are fully incorporated.
  • Sift the flour, cocoa, and salt into the wet mixture, then fold gently until combined and smooth.
  • Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 23–30 minutes, or until the top is set and a toothpick comes out with a few moist crumbs. Cool completely in the pan; do not remove yet.

Peanut Butter Middle

  • In a large bowl, beat the softened butter until smooth.
  • Add the peanut butter, sifted powdered sugar, vanilla, and salt. Mix until the filling is uniform with no lumps.
  • Spoon and spread the peanut butter filling evenly over the fully cooled brownie layer using an offset spatula or the back of a spoon.

Chocolate Topping

  • Chop the chocolate finely if not using chips. Combine the chocolate and cubed butter in a heatproof bowl and melt gently using short microwave intervals or a double boiler. Stir until smooth.
  • Pour the warm ganache over the peanut butter layer and spread into an even layer. Work quickly before the ganache starts to set.
  • Allow the bars to set completely before slicing. They will set in about 2 hours at room temperature or about 1 hour in the refrigerator. Lift the slab from the pan using the parchment overhang, place it on a cutting board, peel back the paper, and slice with a sharp knife, wiping the blade between cuts for tidy slices.

Notes

  1. Chocolate: Semi-sweet or 50–60% dark chocolate works well for both the brownie and the ganache.
  2. Peanut Butter: Use smooth peanut butter that is well combined. Avoid natural-style peanut butters where the oil separates, as that can make the middle oily.
  3. Storage: Keep in an airtight container. Refrigerate if your kitchen is warm to prevent the ganache from becoming too soft.
  4. Nutrition: Nutrition values are estimates per brownie assuming the pan yields 18 uniform pieces.
